We have Builders Merchants.

Plumbers Merchants.

But not Electricians Merchants.

Anyone know why?

No - but how about just the passage of time, and changes in fashions/conventions for naming such outlets - I would imagine that Builders and Plumbers (and hence their 'merchants') were around for a good few centuries before anyone would have know what an electrician was, or what merchandise (s)he would need?!

Can't find any carpenters merchants though, despite there having been a guild for them for nigh on 800 years....

Maybe, but you will find timber mechants. Timber would have been the main material that carpenters would have used 'way back' and, as the situation evolved, those merchants may also have started diversifying to include some of the other needs of carpenters in their repertoire.
