Adding edging bricks

Unsure where to add this but we had our dropped kerb extended recently. Either side of our dropped kerb is a grass verge. The council extended by removing part of the grass verge and adding new kerbstones, a corner kerbstone and some edging bricks along the grass verge as it leads up to the driveway. The wife is keen to have edging bricks on the other side. Lady at the council said it wouldn't be cost worthy enough for them to come out and do it since it's charged per sq m. She did suggest doing it myself.

Whilst I appreciate the legalities of doing it, does any one have advice on how to approach this? I presume I can't just dig away some soil and add the edging bricks .

Did a bit deeper and bed them on a damp mix of grit sand and cement.

Then sit there with a beer until it's cured.
