My calorie gas oven on my barge will not go out when the switch is turned off ,
Please can anyone help me ,

Anything gas related should really be seen to by a gas safe registered repair person.

1) What brand is the actual oven unit?

2) When you turn the flame up (presumably using the same knob) does the flame respond and get bigger?

3) When was the last time it was serviced?

A broken knob, if obvious, may be easy to repair. But if it is clear it is not this then....

Go to https://www.gassaferegister.co.uk/

Look for your area and choose someone who lists working on gas cooker appliances.

If it stays lit, and can't be turned, it needs to be checked out rather than a diy repair.

If it is clear it is more complicated than a broken knob, I personally would not take the risk, especially if it were my own gas oven, in my own house. Even more-so on a barge where I expect escape time is restricted and limited.

Many thanks for your advice, do knobs just break , was working ok the week before ,
Its a vanette oven , always worked well never been serviced , fitted , 9yrs ago

Does the flame respond to turning the knob? i.e get bigger and smaller but just won't turn off.

It could be the valve.

My concern would be that if you blow it out to "turn it off" manually is the gas valve automatically cutting the gas off as it should do for safety.

Not all gas appliances have that feature.
