How deep can you apply plaster

We have knocked a room through in preparation to install a frame for dining room doors.
The wall we took out is old imperial size brickwork, with dot and dab board each side.
In areas, especially around the lintel, the depth of plaster to finish level can be 1-1.5 inch deep. What would be best way to build this out ready for skim? Would be best build layers of bonding or patch with dot and dab board? Any suggestions welcome.

either, whatever works best. bonding isn’t suitable for all substrates. Other dust is available . do your research.
