Over past few weeks my central heating is taking double the time to get to its requested temp of 21 degrees and once it finally reaches 21, it starts to drops massively back to 18/19 degrees within a hour or two. It has never done this and would only drop to a minimum 20 over the next 5/6 hours at the most. Any ideas as to any.potential issues that could be causing this.

A bit more info about your boiler / system / controls would be helpful

Unvented system and an ideal 12 logic boiler. Separate zones/ heating for downstairs and upstairs. Sorry not an expert

Cold weather. A boiler won’t make temperature drop quickly. Turn the boiler up.
