I have a socket one side of the bed at a low level. I want to move this socket further up the wall to go above a bedside table. I also want to add another socket on the other side of the bed.

Would you use the existing socket as a junction box with a blanking plate fitted?

You could do that, but I’d probably leave the original socket in place. You can’t have too many sockets.

Would I chase the wall out from the original socket across to the other side of the room or the new one above the original?

So two fused spurs but allowed because it’s in 4mm?
That would be easier for the cable runs also.
You dont need any additional fuses just spur from the original ring socket (make sure it's not already a spur) to the two new sockets using 4mm.

Leave the socket in place and extend the ring main
First of all do we know whether or not it is a Ring or a Radial?
Secondly, if it is a Ring it would be a Ring Final not a Ring Main.

My apologies - the Title does say a Ring! so we will presume that has been verified.
