Kitchen fan electric connections

I am installing a new 220v kitchen fan. There are four cable connections on the fan: "N", "L" and "1" or "2" for the two speed options. I have three cables: brown, blue and green/yellow. Which cable goes to which switch?

PS: I will choose speed option "1".

PS If they are lost/missing it might help to specify the make and model of the fan.
 
It does depend how you decide to operate the fan.
Also the assumption is that you are presenting the fans terminals with a neutral/switched live and earth.
The speed you choose should be determined by the size of the kitchen and you can determine that here:

If it is similar to the SS-915 model and you do not intend to operate via a twin speed switch - then the diagram suggests the Neutral (blue) goes in the N terminal - the switched Live (brown) goes in the 1 or 2 terminal depending on the speed you want.
If there is an earth terminal available then terminate there otherwise put the sleeved earth cable in a terminal strip.

I would agree the bottom of the PDF you link to is not very clear. It would appear the L terminal is only to help wiring and does nothing. It would seem there is no earth connection and the neutral goes to N and live high speed to 2 or low speed to 1.

It also warns that double pole switching is required
 
Shall I then just insulate the earth cable and do not connect it at all?
 
Connect as riveralt has stated.

The fan is a CLASS II device. put the earth connection in an insulated termination (choc block e.g.). It must not be connected to the fan in any way.

The main thing is to read the manual.(RTFM)

The paragraph at 1.9 does say:

All servicing and installations may only be carried out by a certified electrician

It's so not OK as to beggar belief.

It means that you are doing electrical work without the foggiest idea of what you are doing, and think you can use a G/Y wire in a way which could kill you.

It shows that when you look at diagrams in instructions you are utterly unable to understand them and make wild, dangerous guesses.

Please stop doing electrical work before somebody gets hurt.
