I'm going to be pointing a hearth made from 9 inch old Victorian red pammet tiles. I want the pointing to look reminiscent of lime mortar. What combination of cement or snowcrete, sharp sand or silver sand would produce the desired slightly gritty off-white result?

Yes, I know I could use lime mortar, but it's a small job and I have the above to hand.
:D

The colour of your sands will help get a better match but your are going to pick up the browny/red of builders sand.
So you if you have enough materials, it could be best just to do some small test mixes, leave to dry and see which your happy with.
A good starting point would be
2 soft sand, 1 sharp to 1 white/snowcrete
you can then add smaller amounts of the ratio
2 soft,1 sharp to 1 opc to help tone it, if needed.
