We have a granite worktop with an under mount sink. The mixer tap was obviously installed prior to the sink because there is only 2” between the rear wall and the sink itself and the tap rises through a hole cutout in the granite. I cannot gain access from either side or from the back. How do you suggest I get to the tap fittings without removing the sink, which is fitted lower than the granite. Even with a iPhone camera I can’t get in far enough to see the fittings. Photo below. Thanks in advance.

Your only way, is to release the tap, via that 2" gap, laying in the cupboard, using a long extension, with a deep socket on the end. It will be held in place, using a C metal bracket, and a brass nut.
One of the plumbers, might be able to indicate the size of socket needed, to fit the nut, but I would guess at 10mm.
Is it a Belfast sat on a unit? If so, unit could be lowered and take sink down with it, and out. Not particularly easy but none of the options are…
In which case, the same advice still applies - Disconnect the sink waste, lower the sink and slide it out, breaking the seal carefully between sink lip and granite - a stanley knife will help with that.
Welcome to our world! There must be some sort of gap behind sink for flexis from tap to pass through.
There are long box spanner sets exactly for this job .
As for nut size who knows if it's a m8 thread probably a 13mm spanner required.
But I have 5 different double ended box spanners for this job so its find one that fits.

Whats your purpose in gaining access to the back nut - to remove & replace the mixer or something else?
A bit of light and a camera on a selfie stick will give a clear view of the inaccessible bit.
