About to replace our kitchen sink and taps. (mains water, gravity hot)

Will be getting a monobloc tap, but am undecided whether to go with a single lever style or two levers/taps type.

Any advice? Is it the case that with a single lever tap, that it is impossible to get pure cold through / takes longer, or is this just BS.

Thanks in advance.

Check that the tap you select will work with the hot water pressure available from your gravity system. In a typical 2 storey house, the pressure at the kitchen tap will be about 0.4 - 0.5 Bar. Many taps are designed for unvented or combi boilers with a minimum of 1 Bar pressure.

It's usual for the hot and cold water flows in a kitchen mixer to be kept seperate right up to the end of the spout, so you should be able to get just cold water from it. Bear in mind that if you have just run some hot water, the spout will be hot, so the first of the cold water will be warmed as it cools the spout.

A well designed single lever tap should deliver cold water only, but there may be some dodgey ones dumped on the market via ebay, no questions, no guarantees.
