Air ventilation brick in kitchen

I've stripped out the kitchen and found this behind one of the cupboards.

It is back from when the house had an old air ventilation heater system I think.

Not required anymore and has been blocked up as shown presumably for many many years.

There was a few mould spots on the back of the kitchen cabinet that covered this hole so wondered what I should do about it, if anything?

I'd chisel back the plaster so you have a brick faced border and then cover with a piece of plasterboard and skim over.
You may get small spots of mould on the backs of any kitchen unit simply because kitchens are often hot, steamy humid places at times and air can't normally circulate around the back of them.
 
Yeah that sounds like a sensible plan.
Might add a bit more expanding foam as you can see a bit of light through it.
