Bathroom feeds in unvented

I inherited an unvented system from the previous owner and I am renovating my bathroom with a new shower that will be concealed so I want to get this whole thing done right and when I've got the chance with the best pressures and balanced cold feeds, and then also know when I do my ensuite I will be trouble free. Also Apologies in advance for a lot of "I think's".....im a DIY'er and loving the process of learning.

Original tank I think was gravity fed (Was a tank in the loft that I removed) and the main bathroom never had a shower and only the ensuite.

Current plan above the HW tank is here;

I can see Cold water feeds to Bathrooms appears to be before the Vessel, is this suitable? (Has been in since 2007 based on a date on the vessel)

The feeds for cold concern me as well as it's T'd off at the end of this polypipe to this, I "think" this then feeds the Ensuite cold water.

Also;

1. I can't work out what the pipe under insulation is that runs off the copper pipe in the picture, it has an isolator and goes down to the first floor. This comes off the mains water feed into the loft, and then has been capped off.
2. The only loft fed Hot water feed is the one in the bathroom so no idea where the ensuite gets its hot water from, I'm guessing thats fed from the First/Ground floor HW originally?
