Morning all

I have a couple of questions about bathroom downlights

what grade of cable should I use?

will I need to clear a space in the attic insulation?

these are mains lights with LEDs

what grade of cable should I use?

Cable that is capable of carrying the fault current that is limited by the CPD in the consumer unit for the circuit. What value is it?

will I need to clear a space in the attic insulation?

You'll need to follow the maker's clearances, or they with FRY.
Better to use loft caps or similar and replace the insulation over the top. Otherwise all your heat frokm the room will disappear into the loft, together with the steam. The steam will condense and rot your roof timbers.

Not so easy, is it?
