I am going to install a Baxi Brazilia in my hallway to heat the upstairs hallway with the heat convecting into the bedrooms.

Where would the best position for the heater to do this: Downstairs Hallway, so the heat can convect up the stairs or Upstairs Hallway, where my concern is the heat will travel straight up into the roof (my loft is insulated)?

Bottom of stairs is best position you wont lose it all out of the loft anymore than you would if you fitted it at the top.
Go for the 8000 for all the extra they cost over a 5000

I've bought a Baxi Brazilia Slimline 5 for my hallway but will getting a F8ST (Thermostat version) for my bedroom. Is this wise?
