I would avoid the quick dry water based type, found them to be poor and even with 6 coats not very weather proof, go for any oil based type, good brand like Sikkens, Sadolin etc.
From my experience with oak doors, I would recommend "Dulux Naked Wood". It brings out the grain of oak beautifully but without darkening it too much. It's a 2 part system (preservative basecoat then top coat) and isn't cheap but it's the only thing I would recommend for oak.
Dulux Decorator Centres are the best place to get it but it's worth checking their stock. I think the formulation was changed recently to comply with the latest VOC regs and stock is a little patchy.
