We've taken the coving down in our hallway and found some pretty large gaps between the walls and ceiling that will need filling before we put up wallpaper (aren't looking to put any coving back up). What would be the best/easiest way to fill the gaps?

You will need to reinforce the junction between the wall and ceiling first due to differential movement which will cause cracks to the perimeter.
Plasterers scrim tape then a decent sandable filler.
