Best type and make of replacement Stopcock

Sorry Im a bit dense and have only worked with 15mm plastic before not 25 mdpe but are you saying to kick the 25mm over 90 degrees just after it comes out the floor - using a push fit 25 mdpe elbow, then use the adapter in my photo above, then copper and then the 1/4 turn?

Its a belfast sink so not a lot of room in the lower cupboard and I was thinking about running the feed horizontally UNDER the cabinet to then bring it up the rear wall and have the 1/4 turn vertical behind the cabinet with an access hole in the back of the cabinet to get access.

Also is it ok to run 15mm plastic from that adapter to the 1/4 turn or is it best to switch to plastic after the 1/4 turn?

Not quite.
As mdpe comes out if the floor, replace the current brass stopcock with a 25mm elbow mdpe pointing to your 15mm copper and use the reducing set to attach the copper to the elbow.
Then... Cut in a 15mm lever valve on the 15mm copper.

You don't need the additional adaptor, the reducing set converts to 15mm all within the 25mm elbow.
