Best way to cover this old fireplace?

Got this old fireplace which has been bricked up and need to cover it in something in order to match the plaster around it and finally paint the whole room.

Whats the best option? Was thinking of covering with a piece of plasterboard and filling the edges to save cash on getting a plasterer but would this be quite noticeable with painted over?
