Blanking panel for garage door aperture? Brick?

Hi everyone.

Just moving into a new house with a very nicely built detached single garage (cavity walls, slate roof and double glazing). The garage is not needed as we're building a much larger one elsewhere but it is ideal to house our home gym (in our current place this is in a spare reception room).

Plan on adding additional insulation and plasterboard, skimming and painting and fitting aircon (we have a spare unit we'll be taking with us).

Only area I'm not sure about is the garage door. There is pedestrian access through a side door so the big door is not needed and to do a neat job, I'd like to block this off so that I can board the inside and prevent heat loss.

Obvious solution is to brick it up, but before I do, thought it would be worth checking to see if there is such a thing as a garage door blanking panel that can be successfully used - or are there any simple solutions for building such a blank from sections? I have looked this up on google but can't find anything.

I could frame it and fit featherboard but as I'll be skimming inside, even a small amount of water ingress would damage the decor so looking for something with minimal upkeep.
