Blocking up garden room windows

Hi all.

New to the forum (don’t know why I’ve not registered previously as used it for advice on previously asked questions in the past). Anyway, we have a “garden room” which isn’t much more than a glorified conservatory. It has a flat roof and not sure what the insulation situation with it is, but we’d like to make it more of a usable room. It’s very cold so I plan to pull down the ceiling and see what can be done there, but I also want to do away with some of the windows. I want to get rid of the two either side of the doors on the back side, and just leave the centre on on the right side. Can I batten, insulate and vapour board internally, then clad externally without causing condensation issues, or is it simply better to remove the windows and block up? Conscious about cost with so much to block up, as I also want to block up the doors to the garage and kitchen, and put an internal door from the hallway too. Am I reaching at thinking this is a DIY job with the first option, or should I just bite the bullet and pay someone an unknown amount to do the second. The whole outside would be done with composite cladding to make it look neat, vs a contractor to block up as I think it’s beyond my ability, especially to match brick and mortar colour to the rest of the house.
In my head the DIY option seemed cheaper, but writing it all down now I’m not sure if there would be much in it…..

Any advice would be welcome.

My opinion is to block and brick up..
You could get materials ready and do some labour yourself.
You could also dot and dab inside and joint or skim yourself maybe.
Just need a brickie or local builder for a few days depending on job size.
My neighbour done similar job and looks good. I don't think you need planning as it's there. Not sure about building control?
You need to decide on roof and pitch. Tiled or other conservatory roof type?

I think you be good to find and get a relationship with a local builder. Be open from the start and maybe get them to look at pictures or call in for a quick chat.
Sort out the money required.
Take it from there...
