Boarding up old fireplace

Gas fires were removed prior to me getting the property and this is how it was left, I'd like to board it up but just wanted to check in was doing the right thing first - chip away a bit more of the surrounding plaster and then put some plywood or plasterboard across the whole thing, then plaster? Does that sound ok? Will I need a hit and miss air vent in place too?

Definitely vent it. Else it will run with condensation and eventually cause a problem.
 
If it had a gas fire is there not an air vent there somewhere? When I took my gas fire out there was an air vent to the external wall.

Then you can add a frame round the edge, plaster board, and plaster around it.
