Bodged Central Heating extension problems

I am a newbie and looking through the site some of my questions have been answered so thanks. Some still remain.

Firstly though, had an extension done a few years back and ever since, whenever we had the hot water heated through the Vaillant Ecomax VU226E condensing boiler, the rads in the extension would heat up.

I left it and just worked round it by turning those rads off in the summer. Did notice that the pressure was dropping in the boiler and had to refill every month or so (by about 1 bar).

Recently all the rads started heating up (old part and in extension) and the pressure drops increased. I have now replaced the air release vent above the pump in the boiler, and last night changed the Pressure relief valve. I think things have improved, but there is still a small pressure drop which I will now monitor.

Questions/Help.

1. There is still dripping from the condensate pipe - I think this is normal but could this be contributing to the pressure drop (slight).

2. More importantly - what is happening to the water heating in relation to the rads. They are being heated up at the same time. I dont think its the 3-way valve (probably not the right technical term) as this is turning flow for CH when its supposed to. Could the original installer have connected up wrong into the Immersion tank - if so any guidance welcome.

Another thought is could there be a leak within the immersion tank, where the hot water from the boiler which I would imagine doesn't actually mix with the water in the tank, but flows through heating transfer pipes in the tank - how coul dI quickly check this.

I'm not a boiler specialist or tradesman, but can DIY ok.
