Having looked at the diagram on my new hob it appears that I need to bridge terminals one and two for a 230-240V supply.

My question is, as I will be wiring the hob into 6mm cable, do I need to use the same cable to bridge the terminals? It's just that they look a little tight to take two 6mm cables, which is what terminal one will have to do.

Yes.

Most hobs come with a set of links. If not, if you're really careful with stripping, you can run the same length of core around both screws ;)
