Bumpy Brick Dot and Dab

Hi
I want to put up some plasterboard on a brick opening that has been knocked out below a lintel and its obviously not flat. A quick question.

I was going to dot and dab some plasterboard to it which will then be skimmed over, how flat does it need to be ie is dot and dab adhesive quite forgiving? How flat should i aim for on the bricks, i could grind them back to get it really flat but not sure if i should just use a lot more where needed?
