Capping a stone wall?

Hi guys n gals,

Im after some advice for finishing off a stone wall. I have done the wall and got it upto height but I want to cap the wall or I believe the actual term is coping the wall but I might be mistaken. Anyhow I have the cement and sharp sand but am not sure whether to pour it on top and shape it with a trowel or whether to make a mould and put some capping/coping stones on individually. If I do use the trowel method do I need some lime in the mixture so I can rectify mistakes?

Just to clarify the coping/capping method i'm talking about is a curved top or semi circle almost.

Any pointers would be greatly appreciated, cheers
