I have seen an advert on the TV and read posts about them, but do they keep the gunk from building up?

Yes, but only if they are maintained at the correct strength, which should be checked regularly, say every two years. More often if you have problems.

If you have gunk in your system already, it should be cleaned first using Sentinel X400 or similar, before refilling and adding the inhibitor.

Boiler manufacturers may not accept liability for boiler faults if the system is not properly inhibited.

Only use branded products, such as Fernox and Sentinel, not "own brand" versions.
 
Inhibitors do exactly what the say on the tin they inhibit oxygen from being absorbed into the water (among other things) without the oxygen you dont get corosion, no corosion no gunk.If the system hasnt had any ihibitor in the you must clean the system first or yo could be wasting your time.
