When replacing a central heating pump, what, if anything should be used as sealant on the joints?

(Assuming you mean on the large-diameter joint between pump and isolating valve.)
Ideally, nothing - especially not a hard-setting sealant - it'll only make the pump difficult to remove later.
If possible, DO NOT use the fibre washers that come with some pump valves. The rubber washers that come with good makes of pumps (eg. Grundfos) are more satisfactory.

lots of silicone GREASE on pump threads.

Pump valve unoins a pinch over hand tight. NO MORE

Easy change in 2 years when sludge has wrecked the 'new pump'

Doh! I hadn't actually spotted the rubber seals in the box.
