Can you change radiator valves on micro bore pipework just like you can on 15mm pipework?

yes
unless you have twin entry valves which are not obsolete (as far as I no) so you will have to re pipe ether side

personally if the old nut fits the new valve no

If it doesn't then I would try to get the olive off

if all fails id cut and solder a new piece of pipe

thanks with 15mm do you usually leave the olive on if the nut fits too? Have always cut them off.

Yeah, recycle where possible :), a few turn of PTFE just to take up the slack in the ridge on the olive from the previous fixing to ensure tightness
