I have been growing veg in pots, and they are really doing well, what I would like to know is, can all this compost used again?.

I have loads of it in pots, and after the plants are finshed, do I just throw the compost away, or can I recycle it to be used for future planting?

You can use it again, but some of the goodness will have been used, also you should not grow the same crop in it again. I would have thought that if you tip it all out mix in some fresh & then use again.
 
Or throw it on the garden or compost heap, it will add a bit of fibre.

The mineral "plant food" content will be used up; it will have extra hardness salts from where you watered it, and probably contain mildew or mould.
 
I always throw the old compost on to the garden, doing this regularly helps to condition the soil.
