Constant or Variable (Zonal heating) - Common question!

I've tado valves on every rad in the house, except towel rails in the ensuite and bathroom, which as per another thread, you will see I've just replaced the valves on. The boiler is a Weissman Vitodens 100, and the tado is configured using OpenTherm.

We've only been in the house a year or so, and im having a bit of a battle with getting the temperature right.

Currently, I have the rooms set to variable temps based roughly on times of day they will be used. Due to the nature of the house being open plan with plenty of glass, the temps throughout can quickly drop. Especially overnight.

We have a little child and that bedroom is pretty much on constantly...

I know this question is common as you like, but, should I go constant, or stick variable? Or constant, but exclude the rooms that never get used?
