Coping stones across cavity wall, inner leaf is 30mm higher than outer leaf...

Hi all,

Due to complicated reasons involving the wrong trims for a GRP roof, the final level of the inner leaf of our extension walls is now between 20-30mm (30mm at highest point) higher than the outer leaf. We now have to put the coping stones on and are wondering how to bridge the gap between the final course of external bricks and the coping stones

Option 1:
Lay the coping stones on a 10mm mortar bed on the inner leaf, meaning we have to build up a 40mm mortar bed on the external. Is this a problem other than perhaps looking a little unusual?

Option 2:
As above but instead of the 40mm being just mortar, is there some kind of 10-25mm slip brick we use to fill in some of that gap and make a feature of it. IE 10mm mortar, 20mm slip brick, another 10mm mortar and we achieve the overall 40mm.

Image below if the above is unclear. Basically just need to find an acceptable way to deal with the 40mm gap!

Is it an option to take a 9" grinder to the inner leaf and trim them all down to meet?

Sadly not, the inner leaf is about 10mm above the outer but on top of that there is GRP profile that has a radius (which was the wrong profile but too late now..) which at it's highest point adds another 20mm = overall inner leaf 30mm above outer.

We can't grind through the GRP as it's supposed to go up and over the inner leaf and it's already in place.
