Is it okay to extend a hip by extending the jack rafters up onto the new ridge board
or
Should the jack rafters above the hip board be removed back to the full common rafter
and then replace them with full common rafters tied back the the lower jack rafters ?

From this photo (purely reference-not actual work) they are cutting into the hip board
and running the new common down a determined distance and when that's all done,
removing the hip altogether.

You can either drop a lay board onto the existing roof (leaving the hip intact) and fix the new jacks onto the lay board up to the new ridge or completely replace the jacks and hip board and allow the new rafters to travel down to the wall plate.

All new rafters need to be sized and purlined correctly.

The first method is usually the standard, owing to the existing ring purlin supporting the existing hip roof (unless it can be successfully extended) and then mebbe larger section rafters used on the new - or a separate purlin system for the new.
