Couple of garage questions

Basically your firring isn't a structural part so it's supposed to be fully supported. Your plywood or osb would in that case be point supported as discussed above which is not OK . Even if you could, it wouldn't be able to span as far, as the clear span would be wider.
Yes the firring will have some of its own stiffness, and there's some tolerance in the fall of the roof and the snow won't be as bad as you calculate for, but they aren't fundamentally as good as each other so if you have a choice do it the normal way.
