Cut Oak Worktop

Hello, Any opinions greatfuly received. This is the second worktop my carpenter has cut, he got the dimensions wrong on the first one and it is now scrap! Where I have oiled there is a line now showing, the knot on the sink cut out is black. Any ideas why? Thank you
