I'm sure this is a dumb question but I can't find the answer anywhere.
I'm looking to buy an LED panel as the main light source in my kitchen. The panel I'd go for is dimmable and has a remote control.
The remote is quite convenient to use to change light temperature and intensity, but I don't want to use it to switch the light on/off.

If I install this panel, can I just use the regular wall switches to swtich it on/off, or will I have to use the remote?

Unless the "control" for the lamp "remembers" the "settings" when the power is "off" - NO.

However, these days many such electronic devices DO remember the previous setting

What is the Brand, Model Number of the device concerned?
Do the "specifications" give any indication of any such "memory"?
