Could anyone tell me if I can dimm the secondary part of a 120/12 transformer for 20w/12v spot light?

You always dim the primary side.

You could dim the voltage coming out of the transformer, but you would have to have a separate dimmer and 240V switch. You might very well also have to build the dimmer yourself.

a) you are interested in how we do things in the UK, so you can compare to US practice
b) you have a UK-centric application in mind
c) you didn't notice this forum is about UK practice
