Dot and dab (bigger boards or join above)

My floor to ceiling height is 2700mm.
The standard boards are 2400mm.
I have found you can get bigger boards. Is it ok to use the standard boards and join a strip above it or is it better to use complete boards? I was going to do the walls first and then put the ceiling in?
Any advise appreciated.

Joins are ok but best to do the ceiling first.

They are harder to get perfect so by doing them first you cover the edges with the wall boards.
