Dry Stacking garden wall?

I don't think it will be very successful doing it your way. Too unstable either from the start or in the future.
 
If you want to have a go at dry-stone walling then look for suitable stones to do the job - laying flat bricks atop each other won't last five minutes.
 
As above, the whole wall would be completely unstable, not in a dangerous way really but even leaning on it would push the blocks out of alignment. There are alternatives, dry stone walling or look at gabions or google interlocking retaining wall blocks or similar.
