Envirovent fans unreliable

I'm not sure what someone being disabled has to do with issues with extractor fans possibly not working correctly.

The humidistats may be adjustable, do you have the model name/number of the fans and the documentation? If they are faulty they should fix/replace them under the SOGO (assuming that applies to and you are in Scotland) If you paid by credit card then you may also be able to claim under S75 if they are not working).
 
Do what the rest of us have to do

1) put lids on pans to minimise steam generation

2) open windows to control humidity

3) turn the fan On and live life

Why are you subjecting your house to damp when you know full well that you can turn the fans on manually.

It could well be that the humidity sensors are choked with particles of your cooking as four pots per day of the size shown suggests an almost industrial operation.

The gas hobs also generate water vapour so again, turn the fan on.
