Surprisingly, to me anyway, I don't know very much about the various types, if I wanted some fairly bog standard Ethernet cable Cat5e would be fine, but do you go for UTP or FTP? What's the difference in practice?

not sure Foiled cable FTP is worth it personally, unless you're talking a server rack with many intertwined runs of ethernet.
