what would happen if a chicken was allowed to rear its eggs and chicks naturally@?

You'd get a mixture of hens and cockrels eventually? Assuming the eggs had been fertilised.

Chickens are pretty dim, if after years of having the eggs taken off them, would they sit on the eggs to incubate them, if left to their own devices?

years of :!: but yes, you often use a ceramic egg for a broody chicken to incubate.

Sadly after a layer had stopped laying they are pretty much inedible. Make quite good pet food / compost though.
