Do you want (a) fast, (b) an additional external switch to change between fast and slow, or (c) slow ?
 
Ideal setup will be:

Slow comes on with the light.
Humidity sensor then tells fan to go to high.

So the middle of the three diagrams.
What I'm not sure about is if I need to power a) both slow and fast to get fast
or
B) just fast to get fast and slow to get slow
 
I don't think that fan includes a humidity sensor. Have you bought a separate one?
 
Sorry yes, ok have a seperate system to measure humidity and turn on.

The room has no window so I want the fan on when someone's in (using toilet etc). When someone is in shower, the humidity will make the fan go at high speed.

Looking at the diagrams it looks like I have to break connection to l1 to get fast speed, and the other connection is turn on or off?
 
Can you post a link / photo of the humidistat that you have?
 
No stat as yet. But thinking of hooking up something from a raspberry pi via a 240v relay that has NC and no.
