Still a bit nervous but getting better each day, we hardly ever see her other than meal times, walks and toilet breaks. She just lays asleep in the bedroom the rest of the time. Going to take her for her first run next weekend as we have booked a field for half an hour.

All sounds like perfectly normal greyhound behaviour. I have relatives who have had two ex-racers. They're more like cats than other dogs. Not a good or bad thing, just don't expect the sort of excitable playfulness you'll get from most other dogs.
