Finest gold keeps going cold

Hi
I have a Halstead Finest Gold combi, no problem with the central heating side of things, but when I run the hot water it starts off ok but will then go cold, then it will go hot again. Can anyone tell me what the problem might be, and Is there anything I can check or do, or do I need to call in a professional?

Thats great, as the heat exchanger was replaced about 13 months ago :(
