Finnishing a bay window

P

Hi
Have just had new bay windows fitted and rather than refit white plastic inbetween them as before i would like to plasterboard and skim inbetween them so that it matches the rest of the decor.
What is the best way to achieve this and is there any set height to get a return that i can actually get a trowlel down for a decent finish. Cheers Pete
