Fitting a gully surround

Only just been able to get hold of a gully surround and its time to install it.

I want to fit it so that the surround protrudes a little above the height of the block paving but not too much....maybe an inch or two.

At the moment some of the concrete base for the wall means i cant drop the surround down to a low enough level.

Is it okay to chisel/cut some of this out so that i can drop the surround down to the height i need?

or am i better off not disturbing this and just using a grinder to modify the surround to fit with the required amount height above the paving?

In general terms of fitting, is it just a case of mixing up a strong mortar mix and bedding the surround into the mortar, ensuring some of the mortar fills any gaps between the open ends and the wall?

p.s the brick work is the dwarf wall for a conservatory

It looks like it might be easier to cut the surround. Then just splodge it on some mortar.
