The idea of using mortar is to support the tray evenly over as large an area as possible.
Your new tray will need a fresh mortar bed to conform to it's individual shape. Each individual tray varies slightly according to manufacturing tolerances.
Once the old tray is out the way, it should be relatively easy to remove the old bedding mortar, it's usually quite a weak mix.
what do you think about using tile adhesive instead of mortar to make the base. Just trying to find an alternative to mortar as we don't want that unsightly mortar line round the base of the tray.
