Could someone tell me what preparation is necessary before i fit a carpet over old quarry tiles?

if there is any damp coming from the tiles then you may want to put a damp proof membrane down.
if your not intending using edge grippers then rest is standard (underlay then carpet on top and spray carpet adhesive to hold down).
if you intend carpet grippers then they will need gluing down firmly (with say contact adhesive) as opposed to the normal nailing.
i would probably go with felt underlay given that the tiles are likely to be a bit uneven.
