Hi, i currently have carpet covering floorboards that are in very good (as new) condition, i am thinking of taking up the carpet and staining them, im after a nice dark brown with a satin effect, bit like an old pub floor style, what products should i be using and should i roller or brush or what ?

Osmo are very good

They also sell an applicator for their products. Best to avoid the cheaper diy products as the pigment can often streak in them and bear in mind the difference between oils and stains.
Stains only slightly penetrate the surface and oils deeply penetrate into the timber so need more coats but provide a much better and hardier finish.

Also think about sound, not so bad if its downstairs but an upstairs room can drive you mad if you've got kids bouncing around!

I am using stain and "diamond hard floor varnish" (most of the time satin finish) from Ronseal- they do good work for the surface.
Before applying stain- moping timber with wet cloth, this helps stain to go evenly, depend on the color stain doing in 1-2 coats and varnish with 4 coats (sanding between them with fine sandpaper)
As a method of application personally I am using decorators sponge, sometimes bristle brushes (for thicker coats)
