when disconnecting electric shower is it safe to leave the fuse out of the fuse box

If that is the right fuse for the shower circuit. But the fuse will only be 30A which is hardly sufficient for an electric shower.

If this is a permanent disconnect you should completely remove the cable at the fusebox end - live, neutral and earth.
Not just remove the fuse.
Note: Neutral is considered a live conductor.

yes you can leave it out as a temporary isolation, but remember to test the circuit your working on .
